The perfect poached egg (V)

Ingredients
2 free-range eggs
Water
Method
- Fill a saucepan with several inches of water, enough to cover your egg(s)
- Bring water to the boil, and lower to a simmer
- Crack your egg(s) and slide them into the water one at a time
- Turn the heat down and cover with a lid
- Remove with a slotted spoon after 2-4 minutes, depending on whether you want a soft or firm egg and yolk
- Serve on sliced toast with avocado for a decadent breakfast, or over greens and salmon for a tasty lunch
