The perfect poached egg (V)

Prep time: 1min | Cook time: 2-4mins

Ingredients

 2 free-range eggs

 Water 

Method
  1. Fill a saucepan with several inches of water, enough to cover your egg(s)
  2. Bring water to the boil, and lower to a simmer
  3. Crack your egg(s) and slide them into the water one at a time
  4. Turn the heat down and cover with a lid
  5. Remove with a slotted spoon after 2-4 minutes, depending on whether you want a soft or firm egg and yolk
  6. Serve on sliced toast with avocado for a decadent breakfast, or over greens and salmon for a tasty lunch
