Boxing Day Bubble & Squeak Cakes (V)

Ingredients
Flour for dusting
Splash of oil
5ml butter
Any left-over veg works, but we’d always recommend:
200g green cabbage (not red as it changes the colour!)
200g sliced sprouts
100g sliced leeks
500g mashed or crushed new potatoes
Method
- Mix together equal amounts of veg that you have, such as:
200g cooked green cabbage
200g cooked and sliced sprouts
100g cooked and sliced leeks - Mix in 500g of mashed or crushed potatoes (leftovers or a fresh batch)
- Shape into five 200g balls – this will give you even cooking!
- Lightly roll out to about 2-3cm thick
- Dust with flour and tap off any excess
- Add a splash of oil and 5ml of butter to a pan and heat
- Gently place the bubble & squeak cakes into the pan and cook until the outsides are lightly coloured, and hot on the inside
- Serve for breakfast with poached eggs on top or as an easy boxing day lunch with cold meat and gravy! Either way, you’re about to enjoy something tasty and use up any left-over veggies.
