Sage, Onion, & Cranberry Stuffing (V)

Ingredients
250g Vegetarian Sage & Onion stuffing mix
Water, as per your stuffing mix instructions
Butter for greasing
20g frozen cranberries
5g flat leaf parsley
Method
- Simply make the basic stuffing mix up to the guidelines supplied
- Before putting in the oven, add the 20g of frozen cranberries into the mix
- Leave to stand and expand – the longer we leave the mix, the better
- TOBY TIP: Stuffing will soak up a lot of water (up to three times its own size). At first it'll look drowned, but leave it in the fridge and you'll soon see it absorb the liquid
- Pre-heat the oven to 200C while you wait
- Lightly butter a roasting tray and add the stuffing mix to the tray
- Do not press down. Allow the mix to stay loose with a few natural peaks or dips – this will help it go crispy!
- Put into the oven for 15 minutes
- After 15 minutes, remove from the oven and mix – again, don’t put too much pressure on the mix
- Return to the oven for a further 10-15 minutes until crispy
- Remove from the oven and stir again – this will give you a light, but crispy stuffing to go with your meal
- Top with some finely chopped parsley to add a bit more colour!
