Knickerbocker Glory (V)

Ingredients
2 ltrs of your favourite Vanilla or Raspberry ripple ice cream
160g Raspberry or Strawberry Sauce
320g drained tinned fruit cocktail
4 cocktail or glace cherries
4 ice-cream wafers
4 sprigs of mint
150mls whipped double cream
Method
1. In chilled sundae glasses (a large wine glass is perfectly fine to use) layer half the raspberry or strawberry sauce, followed by half the tinned fruit cocktail.
2. Add 2 scoops of ice cream with a warmed spoon.
3. Then repeat the previous steps once more before topping with a spoonful of whipped cream
4. Garnish with a wafer, a fresh cherry and a sprig of mint, then serve immediately.
