Lemon Blizzard Sundae

Serves 4 | Prep time: 10mins | Cook time: 30mins

Ingredients

 2 litres of your favourite vanilla ice cream

 240g lemon curd or lemon sauce

 4 meringue nests

 4 ice-cream wafers

 4 sprigs of mint

 4 thin slices of lemon

 150mls of whipped double cream

Method

1. In chilled sundae glasses (a large wine glass is also ok) layer half the lemon curd, followed by half a crumbled meringue nest.

2. Add 2 scoops of ice cream into the glasses using a warmed spoon.

3. Then repeat the process creating layers of lemon curd, meringue and ice cream before topping with a spoonful of whipped cream.

4. Garnish with a wafer, a slice of lemon, followed by a sprig of mint.
