Soft & Fluffy Mashed Potato (V)

Prep time: 15mins | Cook time: 20mins

Ingredients

 1.5kg potatoes – Maris piper or Rooster

 250ml semi skimmed milk

 125g soft spread

 Salt & pepper to taste

 Handful of grated cheese (optional)

Method
  1. Wash and peel your potatoes, removing any eyes and rinse in cool water
  2. Thinly slice the potatoes and par boil in lightly salted water for 10-15 minutes
  3. Remove any excess water from the saucepan and add the semi skimmed milk, soft spread and salt & pepper to taste
  4. Mash using a potato masher or a blender until smooth
  5. TOBY TIP: For the smoothest mash, dig out the old ricer from the back of the cupboard. If you don't have one, push your mashed-up potatoes through a sieve
  6. If using cheese, add it to the potatoes and blend one last time
  7. Serve hot with your favourite roast
