Soft & Fluffy Mashed Potato (V)

Ingredients
1.5kg potatoes – Maris piper or Rooster
250ml semi skimmed milk
125g soft spread
Salt & pepper to taste
Handful of grated cheese (optional)
Method
- Wash and peel your potatoes, removing any eyes and rinse in cool water
- Thinly slice the potatoes and par boil in lightly salted water for 10-15 minutes
- Remove any excess water from the saucepan and add the semi skimmed milk, soft spread and salt & pepper to taste
- Mash using a potato masher or a blender until smooth
- TOBY TIP: For the smoothest mash, dig out the old ricer from the back of the cupboard. If you don't have one, push your mashed-up potatoes through a sieve
- If using cheese, add it to the potatoes and blend one last time
- Serve hot with your favourite roast
