Red Cabbage with Orange Juice (Ve)

Ingredients
Whole red cabbage
3 tablespoons of cranberry sauce
3 tablespoons of orange juice
Handful of flat leaf parsley
Method
- Wash cabbage thoroughly before use
- Peel any damaged outer leaves from the cabbage
- Cut the bottom to create a flat surface, then into quarters through the stalk
- Remove the core of the cabbage and finely shred/cut as required. If you like it chopped thicker, add 15 minutes onto the cooking time
- TOBY TIP: For great taste, colour and flavour with veg, steaming is the only way to go. Alternatively cook on the hob in hot water
- Once cooked, add cranberry sauce and orange juice mixing thoroughly with two spoons
- Garnish with chopped parsley and serve
