Red Cabbage with Orange Juice (Ve)

Prep time: 10mins | Cook time: 30mins

Ingredients

 Whole red cabbage

 3 tablespoons of cranberry sauce

 3 tablespoons of orange juice

 Handful of flat leaf parsley

Method
  1. Wash cabbage thoroughly before use
  2. Peel any damaged outer leaves from the cabbage
  3. Cut the bottom to create a flat surface, then into quarters through the stalk
  4. Remove the core of the cabbage and finely shred/cut as required. If you like it chopped thicker, add 15 minutes onto the cooking time
  5. TOBY TIP: For great taste, colour and flavour with veg, steaming is the only way to go. Alternatively cook on the hob in hot water
  6. Once cooked, add cranberry sauce and orange juice mixing thoroughly with two spoons
  7. Garnish with chopped parsley and serve
