Root Vegetable Mash (V)

Ingredients

 500g celeriac, peeled and cubed   

 500g parsnips, peeled and cubed   

 500g carrots, peeled and cubed   

 50g butter, melted   

 Salt and ground black pepper   

 50g cheddar cheese  

 Tablespoon of course-grain mustard  

Method
  1. Place all the vegetables together in a pan and boil for around 20 minutes until tender
  2. Drain away the water, then return to the pan  
  3. Mash the vegetables until smooth, and stir in the butter, seasoning, cheese and mustard  
  4. Place into an oven-proof container, fork the top and bake until slightly crispy
  5. Serve alongside your roast for the perfect cheesy mash
