Pigs in Blankets

Family favourites for years... and a must-have with any roast!

Serves 4

Prep time: 5mins | Cook time: 30mins
Ingredients
  • 8 Good quality Lincolnshire or Cumberland chipolata sausages (or, 16 cocktail sausages if you prefer)
  • 8 rashers of thin cut smoked streaky bacon (if using cocktail sausages cut in half widthways)
  • 1 tsp Vegetable oil for greasing
  • 1 tbsp of honey (optional)
Method

1. Preheat an oven to 200ºc and lightly oil a non-stick roasting tin with vegetable oil.

2. Lay a bacon rasher out on a clean surface and then place a sausage on top at one end. Roll the sausage diagonally until it’s completely wrapped in bacon.

3. Complete the same process for all sausages then place in the roasting tin evenly spaced apart. If you want to, brush the pigs in blanket with honey with a pastry brush.

4. Bake for 20-30 minutes until nicely golden brown

Serve with lashings of gravy, roast potatoes, red cabbage, Yorkshire pudding and sage and onion stuffing.
