For eggs that’ll have you feeling fine!
Fill a saucepan with several inches of water, enough to cover your egg(s)
Bring water to the boil, and lower to a simmer
Crack your egg(s) and slide them into the water one at a time
Turn the heat down and cover with a lid
Remove with a slotted spoon after 2-4 minutes, depending on whether you want a soft or firm egg and yolk
Serve on sliced toast with avocado for a decadent breakfast, or over greens and salmon for a tasty lunch
