Vegan Root Vegetable Mash (V)

A great recipe that can easily be prepared in advance, then placed in the oven when needed

Prep time: 15mins | Cook time: 30mins
Ingredients
  • 500g celeriac, peeled and cubed    
  • 500g parsnips, peeled and cubed    
  • 500g carrots, peeled and cubed    
  • 50g vegan butter or spread, melted    
  • Salt and ground black pepper    
  • Tablespoon of vegan course-grain mustard   
Method
  1. Place all the vegetables together in a pan and boil for around 20 minutes until tender 
  2. Drain away the water, then return to the pan   
  3. Mash the vegetables until smooth, and stir in the vegan spread, seasoning and mustard   
  4. Place into an oven-proof container, fork the top and bake until slightly crispy 
  5. Serve alongside your roast for the perfect mash
