Honey Glazed Parsnips (V)

Sweet and savoury, perfect for any roast!

Ingredients
  • 1kg parsnips  
  • 20ml runny honey
  • 100ml rapeseed oil
Method
  1. Pre-heat the oven to 200C  
  2. Top, tail, and peel your parsnips  
  3. Cut the parsnips into 4, lengthways to give you an even sized and shape – they will be thicker at one end than the other, this will give you a crisp parsnip!
  4. While we are waiting for the oven to heat, either blanche (place the parsnips in hot, boiling water) or steam (over boiling water) to soften slightly
  5. Add oil to a pan and add into the oven, this will need about 5-10 minutes to heat  
  6. When we have blanched or steamed the parsnips, drain and dry well
  7. Ruffle slightly (like you would to a roast potato) then add into the oven tray with hot oil – be careful!  
  8. Cook for about 25 minutes, at which stage they will have softened and started to colour  
  9. Remove the pan from the oven and drizzle over with the honey – stirring to make sure all the parsnips are covered!  
  10. Put back into the oven for another 5-10 minutes to bake on the honey taste!  
  11. Remove from the oven, stir again to pick any left-over honey on the trays and serve!
